Instructions

  1. Preheat your oven to 400°F (200°C). Scrub the russet potatoes well under cold water to remove any dirt.
  2. Poke a few holes in each potato with a fork and place them directly on the oven rack or a baking sheet. Bake for 45-50 minutes until the skins are crisp and a fork slides in easily.
  3. Remove potatoes from the oven and let cool slightly until they can be handled safely. Cut each potato in half lengthwise.
  4. Scoop out the insides with a spoon or scoop, leaving about 1/4 inch of potato attached to the skin for structure. Place the scooped potato in a mixing bowl.
  5. Add softened butter, sour cream, and milk to the potato flesh. Mash gently with a fork or masher until creamy but not gluey.
  6. Mix in 3/4 cup shredded sharp cheddar cheese, garlic powder, salt, and pepper to taste. Stir well to slightly melt the cheese into the warm mixture.
  7. Spoon the creamy mixture back into the potato skins, piling it generously.
  8. Brush the potato skins lightly with olive oil and sprinkle a bit of garlic powder for extra crunch and flavor.
  9. Top each potato half with the remaining 1/4 cup cheddar cheese to get a golden, bubbly finish.
  10. Bake again at 425°F (220°C) for 15-18 minutes or until the tops are golden brown and crispy.
  11. Remove from oven and garnish with fresh chopped chives before serving.
