  • 2 ½ tablespoons (35 g) granulated sugar
  • ½ teaspoon (3 g) salt
  • 2 tablespoons (30 g) unsalted butter
  • 1 cup (125 g) all-purpose flour
  • 2 large eggs, room temperature
  • Vegetable oil or canola oil for frying
  • ½ cup (100 g) granulated sugar (for coating)
  • 1 tablespoon (8 g) ground cinnamon (for coating)
  • ½ cup (120 ml) heavy cream (for chocolate dip)
  • 4 oz (115 g) semi-sweet chocolate, chopped
  • 1 tablespoon (14 g) unsalted butter (for chocolate dip)
  • Pinch of salt (for chocolate dip)

Instructions

  1. In a medium saucepan, combine 1 cup water, 2 ½ tablespoons sugar, ½ teaspoon salt, and 2 tablespoons unsalted butter. Bring to a boil over medium-high heat.
  2. Remove from heat and stir in 1 cup all-purpose flour vigorously until a smooth ball forms and pulls away from the pan sides.
  3. Let dough cool for about 5 minutes until warm but not hot.
  4. Add eggs one at a time, mixing thoroughly after each addition until dough is sticky but smooth.
  5. Pour about 2 inches of vegetable oil into a deep frying pan or pot and heat to 350°F (175°C).
  6. Using two teaspoons or a small cookie scoop, drop small balls of dough into hot oil in batches, frying 2-3 minutes per batch until golden and crispy.
  7. Remove bites with a slotted spoon and drain on paper towels or wire rack.
  8. While still warm, toss churro bites in a bowl with cinnamon sugar mixture until evenly coated.
  9. Heat ½ cup heavy cream in a small saucepan until hot but not boiling. Pour over chopped chocolate in a heatproof bowl. Let sit 2 minutes, then stir until smooth.
  10. Stir in 1 tablespoon butter and a pinch of salt into the chocolate mixture.
  11. Serve churro bites warm with chocolate dip.

Notes

Maintain oil temperature at 350°F for best results. Do not overcrowd the pan when frying. Toss bites in cinnamon sugar while warm for better coating. Chop chocolate finely for smooth dip. For gluten-free, substitute flour with gluten-free blend. For dairy-free dip, use coconut cream and dairy-free chocolate.
