A quick and easy recipe for crispy roasted asparagus with a golden Parmesan crust, perfect as a side dish or snack made in the air fryer.

  • 1 pound fresh asparagus, trimmed
  • 1 to 2 tablespoons extra virgin olive oil
  • ¼ cup (25g) finely grated Parmesan cheese (Parmigiano-Reggiano recommended)
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt, or to taste
  • ¼ teaspoon freshly ground black pepper
  • Lemon zest from ½ a lemon (optional)

Instructions

  1. Trim the tough ends off the asparagus, about 1 to 2 inches from the bottom.
  2. Pat the asparagus dry with a kitchen towel to remove moisture.
  3. In a mixing bowl, drizzle 1 to 2 tablespoons of olive oil over the asparagus.
  4. Sprinkle garlic powder, kosher salt, and black pepper over the asparagus and toss to coat evenly.
  5. Add the finely grated Parmesan cheese and toss gently to combine without clumping.
  6. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  7. Arrange the asparagus in a single layer in the air fryer basket without overcrowding.
  8. Air fry for 7 to 9 minutes, shaking the basket halfway through cooking.
  9. Remove from the air fryer and optionally zest half a lemon over the asparagus before serving.

Dry asparagus thoroughly to ensure crispiness. Do not overcrowd the air fryer basket to avoid steaming. Shake the basket halfway through cooking for even crisping.
