A quick and easy air fryer Reuben sandwich with corned beef, sauerkraut, Swiss cheese, and a tangy homemade Thousand Island dressing, delivering a crispy, melty, and flavorful classic sandwich.

  • 4 thick slices rye bread (preferably Marble Rye)
  • 8 oz (225 g) thinly sliced corned beef
  • 4 slices Swiss cheese (Emmental or Gruyère can be used)
  • 1 cup (150 g) well-drained sauerkraut
  • 2 tbsp (30 g) unsalted butter, softened
  • ½ cup (120 ml) mayonnaise
  • 2 tbsp (30 ml) ketchup
  • 2 tbsp finely chopped dill pickles
  • 1 tsp (5 ml) apple cider vinegar
  • ½ tsp (2.5 ml) Worcestershire sauce
  • ¼ tsp (1 g) smoked paprika (optional)
  • Salt and pepper to taste

Instructions

  1. Make the Thousand Island Dressing: In a small bowl, whisk together mayonnaise, ketchup, chopped dill pickles, apple cider vinegar, Worcestershire sauce, and smoked paprika. Season with salt and pepper to taste. Refrigerate to let flavors meld (about 5 minutes).
  2. Prepare the Sandwich: Lay out four slices of rye bread. Spread softened butter evenly on one side of each slice; this will be the outer side that crisps up in the air fryer.
  3. Assemble the Layers: Flip the bread slices so the buttered side is down. Spread about 1 tbsp of Thousand Island dressing on the unbuttered side of two slices. Layer 4 oz (115 g) corned beef evenly on each, followed by ½ cup (75 g) drained sauerkraut, then 2 slices of Swiss cheese. Top with the remaining bread slices, buttered side up.
  4. Preheat the Air Fryer: Set air fryer to 370°F (188°C) and preheat for about 3 minutes.
  5. Cook the Sandwich: Place sandwiches in the air fryer basket without overcrowding. Cook for 7-9 minutes, flipping halfway through (around 4 minutes), until bread is golden brown and cheese is melted. Use tongs to flip if no flip feature.
  6. Check for Doneness: Sandwich should be firm with crispy crust and melted cheese visible. If pale or soft, add 1-2 minutes but watch closely to avoid burning.
  7. Serve: Let sandwiches rest for 1-2 minutes before slicing in half to allow cheese to set slightly.

Notes

Drain sauerkraut thoroughly to avoid sogginess. Butter the outside of the bread for a golden crust. Flip sandwiches halfway through cooking for even crisping. For gluten-free, substitute bread accordingly and adjust cooking time. Dressing tastes better after resting in fridge. Reheat leftovers in air fryer at 350°F for 3-5 minutes to maintain crispiness.
