A quick and easy snack featuring thinly sliced Yukon Gold potatoes air fried to crispy perfection, topped with crispy bacon and melted sharp cheddar cheese. Perfect for casual gatherings or a comforting treat.

  • 3 medium Yukon Gold potatoes, thinly sliced (about 500g or 1 lb)
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded sharp cheddar cheese (about 100g)
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 2 stalks green onions, thinly sliced
  • Sour cream (optional, for serving)

Instructions

  1. Wash and dry the Yukon Gold potatoes thoroughly. Using a mandoline or sharp knife, slice them into thin rounds about 1/8 inch (3 mm) thick.
  2. In a large mixing bowl, combine the potato slices with 1 tablespoon olive oil, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss gently but thoroughly to coat each slice evenly.
  3. Preheat your air fryer to 375°F (190°C). Lay the potato slices in a single layer in the basket—do not overcrowd; cook in batches if necessary.
  4. Air fry for 10 minutes, shaking or flipping halfway through to promote even crisping. Watch for golden edges and a firm texture.
  5. Remove the basket and sprinkle half the shredded cheddar and crumbled bacon evenly over the potatoes. Return to the fryer and cook for another 3–4 minutes to melt the cheese and warm the bacon.
  6. If you have more potatoes, add a second layer and repeat the crisping and topping steps. Finish with a final sprinkle of green onions for freshness.
  7. Transfer your crispy Irish nachos to a serving plate and dollop with sour cream if desired. Serve immediately.

Notes

Do not overcrowd the air fryer basket to ensure crispiness. Layer cheese and bacon after the first crisp cycle to avoid sogginess. Pat potato slices dry before seasoning. If some slices are undercooked, air fry a few more minutes. For oven cooking, bake at 425°F (220°C) on a wire rack for 25–30 minutes, flipping halfway.
