A quick and easy creamy paleo pineapple smoothie made with full-fat coconut milk, frozen pineapple chunks, and banana. This dairy-free, paleo-friendly smoothie is refreshing, naturally sweet, and perfect for any time of day.

  • 1 cup (150g) frozen pineapple chunks
  • 3/4 cup (180ml) full-fat coconut milk
  • 1/2 medium ripe banana
  • 1 tbsp fresh lime juice
  • 1 tsp raw honey or maple syrup (optional)
  • A handful of ice cubes (optional)
  • 1/2 tsp vanilla extract (optional)

Instructions

  1. Measure ingredients: 1 cup frozen pineapple chunks, 3/4 cup full-fat coconut milk, 1/2 ripe banana, 1 tbsp fresh lime juice, and optional 1 tsp raw honey or maple syrup, plus vanilla extract and ice cubes if using.
  2. Add pineapple chunks, banana, and coconut milk into the blender jar first for smoother blending.
  3. Pour in lime juice and sweetener if using.
  4. Add ice cubes and vanilla extract for extra chill and flavor depth.
  5. Blend starting on low speed, then increase to high for about 45 seconds to 1 minute until silky smooth and creamy.
  6. Check consistency: add more coconut milk or water if too thick; add more frozen pineapple or ice cubes if too thin and blend again.
  7. Taste and adjust sweetness or tang with extra honey or lime juice if needed.
  8. Serve immediately, optionally garnished with a pineapple wedge.

Notes

Use frozen pineapple chunks for best texture. Full-fat coconut milk provides creaminess. For thicker smoothie, freeze banana before blending. Scrape blender sides during blending to avoid chunks. Adjust sweetness with honey or maple syrup as needed. Store leftovers in fridge up to 24 hours and stir before drinking. Not recommended to freeze leftovers.
