A quick and easy one pot chicken Alfredo recipe with tender chicken, creamy garlic sauce, and perfectly cooked fettuccine pasta. Perfect for busy weeknights and cozy dinners.

  • 1 lb boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil or unsalted butter
  • 3 garlic cloves, minced
  • 3 cups low sodium chicken broth
  • 1 cup heavy cream
  • 1/2 cup whole milk or 2%
  • 3/4 cup freshly grated Parmesan cheese
  • 8 oz fettuccine pasta, uncooked and broken in half
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon Italian seasoning or dried herbs (optional)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Pat the chicken pieces dry and season lightly with salt, pepper, and Italian seasoning if using. (5 minutes)
  2. Heat olive oil or butter in a large deep skillet over medium-high heat. Add chicken pieces in a single layer and cook until golden brown on both sides, about 3-4 minutes per side. Remove chicken and set aside. (8-10 minutes)
  3. Lower heat to medium and add minced garlic to the same pan. Stir for about 30 seconds until fragrant but not browned. (1 minute)
  4. Pour in chicken broth, heavy cream, and milk. Stir to combine and bring to a gentle simmer. Scrape the bottom of the pan to lift browned bits. (2 minutes)
  5. Add broken fettuccine noodles to the simmering liquid. Press down gently to submerge fully. Cover with lid and cook, stirring occasionally, for 10-12 minutes or until pasta is al dente and most liquid is absorbed. (10-12 minutes)
  6. Return chicken to the pan and add grated Parmesan cheese. Stir well to melt cheese and coat chicken and pasta. Add more milk or broth if sauce is too thick. Adjust salt and pepper to taste. (3-4 minutes)
  7. Remove from heat, sprinkle chopped fresh parsley on top, and serve immediately. (1-2 minutes)

Notes

Keep an eye on the pasta while cooking and stir every few minutes to prevent sticking. Add extra broth or milk if the sauce thickens too much before pasta is tender. Use freshly grated Parmesan for best sauce texture. For dairy-free, substitute heavy cream with coconut cream and use dairy-free cheese alternatives. For gluten-free, use gluten-free pasta.
