  • 1.5 pounds boneless, skinless chicken breasts
  • 6 slices thick-cut bacon
  • 8 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/4 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 34 scallions, sliced
  • Salt and pepper to taste

Instructions

  1. Cook the bacon in a skillet over medium heat until crispy, about 6-8 minutes, turning occasionally. Transfer to a paper towel-lined plate to drain and crumble once cooled. Reserve about 1 tablespoon bacon fat in the pan.
  2. Pat chicken breasts dry and season both sides with salt, pepper, garlic powder, and onion powder.
  3. Add the chicken breasts to the skillet with reserved bacon fat over medium-high heat. Cook each side for 6-7 minutes until golden brown and internal temperature reaches 165°F (74°C). Remove from pan and set aside.
  4. Lower heat to medium. In the same skillet, add softened cream cheese, sour cream, shredded cheddar, and chicken broth. Stir continuously until cheese melts and sauce is smooth and creamy, about 3-4 minutes.
  5. Return chicken breasts to the skillet and spoon creamy sauce over them. Sprinkle crumbled bacon and sliced scallions on top. Cover and simmer on low for 5 minutes to meld flavors and warm through.
  6. Taste and adjust seasoning with salt and pepper if needed before serving.

Notes

For dairy-free, substitute cream cheese and sour cream with coconut-based alternatives and cheddar with nutritional yeast. Add red pepper flakes or smoked paprika for heat. Let chicken rest after cooking for juiciness. If sauce is too thick, add more chicken broth; if too thin, simmer uncovered longer.
