  • 8 ounces elbow macaroni pasta (about 2 1/4 cups)
  • 4 large hot dogs, sliced into bite-sized rounds
  • 3 tablespoons unsalted butter, room temperature
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk (or 2% milk)
  • 2 cups shredded sharp cheddar cheese (about 8 ounces)
  • 2 ounces cream cheese, softened
  • 1/2 teaspoon mustard powder (optional)
  • 1/4 teaspoon garlic powder (optional)
  • Salt and black pepper to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add elbow macaroni and cook until al dente, about 7-8 minutes. Drain and set aside.
  2. While pasta cooks, slice hot dogs into bite-sized rounds.
  3. In a medium saucepan, melt butter over medium heat. Whisk in flour and stir constantly for 1-2 minutes until smooth and pasty.
  4. Gradually pour in milk while whisking continuously to avoid lumps. Cook until sauce thickens, about 4-5 minutes.
  5. Stir in mustard powder and garlic powder if using. Add salt and pepper to taste.
  6. Lower heat to medium-low and add shredded cheddar cheese and cream cheese. Stir gently until melted and smooth.
  7. In a separate skillet over medium heat, lightly brown sliced hot dogs for 3-4 minutes, stirring occasionally.
  8. Add drained macaroni and browned hot dogs to the cheese sauce. Stir well to combine.
  9. Taste and adjust seasoning if needed.
  10. Serve warm immediately.

Notes

Whisk the butter and flour thoroughly before adding milk to avoid lumps. Add cheese off heat or on low to prevent separation. Browning hot dogs adds flavor but can be skipped for convenience. Leftovers keep well refrigerated for up to 3 days; reheat gently with a splash of milk.
