  • 2 tablespoons extra virgin olive oil
  • 2 medium shallots, finely chopped
  • 3 cloves garlic, minced
  • ½ teaspoon red pepper flakes
  • 1 can (28 oz / 800 g) crushed or whole peeled tomatoes (San Marzano recommended)
  • ⅓ cup (80 ml) vodka
  • ¾ cup (180 ml) heavy cream
  • ½ cup grated Parmesan cheese (plus extra for serving)
  • Salt and pepper to taste
  • A handful of fresh basil, torn

Instructions

  1. Bring a large pot of salted water to a boil. Add 12 oz (340 g) penne and cook until al dente, about 10-12 minutes. Reserve ½ cup (120 ml) pasta water before draining.
  2. Heat 2 tablespoons olive oil in a large skillet over medium heat. Add 2 finely chopped shallots and cook for 3-4 minutes until softened and translucent.
  3. Add 3 minced garlic cloves and ½ teaspoon red pepper flakes, stirring constantly for 30 seconds to 1 minute until fragrant.
  4. Pour in the canned crushed tomatoes and ⅓ cup (80 ml) vodka. Stir and bring to a gentle simmer. Cook for 10 minutes, stirring occasionally, until sauce thickens and alcohol scent mellows.
  5. Reduce heat to low and slowly stir in ¾ cup (180 ml) heavy cream. Warm through for 2-3 minutes until sauce turns creamy pink. Season with salt and pepper. Add reserved pasta water if sauce is too thick.
  6. Add drained pasta to the skillet with sauce. Toss well to coat. Stir in ½ cup grated Parmesan cheese until melted and silky.
  7. Serve immediately, garnished with torn fresh basil and extra Parmesan. Optionally serve with crusty bread or a green salad.

Notes

Use good quality olive oil and fresh garlic for best flavor. To prevent sauce splitting, stir in a teaspoon of reserved pasta water if needed. Do not rush simmering the tomato and vodka mixture to mellow alcohol and deepen flavor. For a lighter version, substitute half-and-half for heavy cream. For dairy-free, use coconut cream but flavor will differ. Save some pasta water to loosen sauce if too thick.
