  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 packet (about 1 oz) ranch dressing mix
  • 1 cup shredded cheddar cheese (about 4 oz)
  • 6 slices bacon, cooked crisp and crumbled
  • 2 stalks green onions, thinly sliced
  • 1/2 teaspoon garlic powder
  • Freshly cracked black pepper, to taste
  • Optional: pinch of smoked paprika

Instructions

  1. Cook the bacon in a skillet over medium heat until crisp, about 6 to 8 minutes, flipping occasionally. Drain on paper towels and crumble once cooled.
  2. Shred the cheddar cheese while the bacon cooks.
  3. In a medium mixing bowl, combine softened cream cheese and sour cream. Use an electric mixer or whisk to blend until smooth and creamy, about 1 to 2 minutes.
  4. Stir in ranch dressing mix, garlic powder, and freshly cracked black pepper to taste. Mix gently until fully incorporated.
  5. Fold in shredded cheddar cheese and crumbled bacon, reserving a small amount of bacon and green onions for topping.
  6. Transfer the dip to a serving bowl, smooth the top, and sprinkle reserved bacon and green onions on top.
  7. Cover and refrigerate for at least 1 hour to let flavors meld.
  8. Before serving, bring the dip out about 10 minutes to soften slightly. Serve with potato chips, veggie sticks, or toasted baguette slices.

Notes

Let cream cheese soften at room temperature for easier mixing. For crispier bacon, bake on a wire rack in the oven. Chill dip for at least 1 hour for best flavor. If too thick after chilling, stir in a tablespoon of milk or buttermilk to loosen. Avoid over-mixing to keep dip light and fluffy.
