  • 5.2 oz (150 g) garlic and herb Boursin cheese
  • 3 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons unsalted butter
  • ¾ cup (180 ml) whole milk or half-and-half
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • Salt and freshly cracked black pepper, to taste
  • Parmesan cheese, optional for sprinkling

Instructions

  1. Bring a large pot of salted water to a boil. Add 12 oz (340 g) pasta and cook according to package instructions until al dente (usually 8-10 minutes). Drain, reserving ½ cup (120 ml) pasta water, and set aside. Toss pasta with a little olive oil after draining to prevent sticking.
  2. While pasta cooks, heat 2 tablespoons olive oil and 2 tablespoons unsalted butter in a large skillet over medium heat. Add 3 cloves minced garlic and sauté for about 1-2 minutes until fragrant and golden, being careful not to brown.
  3. Lower the heat and add ¾ cup (180 ml) whole milk to the garlic mixture. Stir gently while warming the milk but do not let it boil.
  4. Add the entire 5.2 oz (150 g) package of Boursin cheese to the skillet. Stir continuously until the cheese melts completely and forms a smooth, creamy sauce. If sauce is too thick, add reserved pasta water a tablespoon at a time to loosen.
  5. Add the drained pasta to the skillet, tossing gently to coat every strand. If the sauce feels too thick, add a splash more pasta water. Season with salt and freshly cracked black pepper to taste.
  6. Stir in 2 tablespoons chopped fresh parsley and 1 tablespoon chopped fresh chives to brighten the sauce.
  7. Remove from heat and sprinkle with grated Parmesan if desired. Toss gently and serve immediately, garnished with extra herbs.

Notes

Use low heat when melting Boursin cheese to avoid separation. Reserve pasta water to adjust sauce consistency. Fresh garlic is preferred for best flavor. Toss pasta with olive oil after draining to prevent sticking. Variations include adding sautéed mushrooms, spinach, grilled chicken, or bacon. For dairy-free, use plant-based cream cheese and milk alternatives.
