  • ½ cup granulated sugar (100g)
  • ½ cup packed brown sugar (110g)
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup + 2 tablespoons all-purpose flour (140g)
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup chocolate chips (175g) – mix of semi-sweet and milk chocolate recommended

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease an 8-inch cast iron skillet with butter or non-stick spray.
  3. In a mixing bowl, beat together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  4. Add the egg and vanilla extract to the butter and sugar mixture and mix until fully combined.
  5. In another bowl, whisk together the all-purpose flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring gently until the dough comes together but remains soft.
  7. Fold in the chocolate chips until evenly distributed.
  8. Spread the cookie dough evenly into the prepared skillet, smoothing the top with a spatula or the back of a spoon.
  9. Bake in the preheated oven for 18-22 minutes until the edges are golden and firm but the center remains soft and slightly underbaked.
  10. Remove from the oven and let cool in the skillet for at least 10 minutes to set the cookie.
  11. Slice into wedges and serve warm, optionally with vanilla ice cream or caramel sauce.

Notes

Do not overbake to keep the center gooey; the cookie will continue cooking in the skillet as it cools. Use room temperature butter and egg for best mixing results. Tent with foil if edges bake faster than center. Let the cookie rest before slicing for easier serving. For vegan or gluten-free options, substitute butter and flour accordingly.
