Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. Make the cream cheese filling: Beat 4 ounces softened cream cheese with ¼ cup powdered sugar and ½ teaspoon vanilla extract using an electric mixer until smooth and fluffy (2-3 minutes). Chill in the fridge.
  3. Prepare the brownie cookie dough: Whisk together 1 cup all-purpose flour, ½ cup cocoa powder, ½ teaspoon baking powder, and ¼ teaspoon salt in a large bowl.
  4. Cream the butter and sugar: Beat ½ cup softened unsalted butter with ¾ cup granulated sugar until light and fluffy (3-4 minutes). Add 1 large egg and 1 teaspoon vanilla extract, mixing until combined.
  5. Gradually add the dry ingredients to the butter mixture, mixing on low speed just until incorporated. Avoid overmixing.
  6. Assemble the cookies: Scoop about 1 tablespoon (15g) of dough and flatten slightly. Place about 1 teaspoon of cream cheese filling in the center, then top with another flattened tablespoon of dough, sealing edges well.
