A warm and comforting breakfast casserole featuring crispy hash browns, creamy custard, and savory sausage, perfect for busy mornings or weekend brunches.

Ingredients

Scale
  • 32 oz (900 g) frozen shredded hash browns, plain and unseasoned
  • 8 large eggs, room temperature
  • 1 ½ cups (360 ml) whole milk
  • 1 cup (240 g) sour cream
  • 2 cups (200 g) shredded cheddar cheese
  • 1 lb (450 g) cooked breakfast sausage, crumbled (optional)
  • 1 tsp onion powder
  • ½ tsp garlic powder
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper (adjust to taste)
  • 2 tbsp fresh chives, chopped (optional garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the breakfast sausage in a skillet over medium heat until fully cooked and no longer pink, about 6-8 minutes. Drain excess fat and set aside to cool slightly.
  3. If frozen hash browns are in a block, break them up gently with your hands or a fork to loosen.
  4. In a large mixing bowl, whisk together 8 large eggs, 1 ½ cups whole milk, and 1 cup sour cream until smooth and combined.
  5. Stir in 1 teaspoon onion powder, ½ teaspoon garlic powder, salt, and pepper to taste.
  6. Add the hash browns, cooked sausage, and 2 cups shredded cheddar cheese to the custard mixture. Fold gently until evenly coated.
  7. Spray or butter a 9×13-inch (23×33 cm) baking dish, then pour the mixture in and spread evenly.
  8. Bake uncovered for about 50-55 minutes until the casserole puffs up, turns golden brown on top, and edges are crispy.
  9. Test doneness by inserting a knife or toothpick in the center; it should come out clean. If still jiggly, bake another 5-10 minutes.
  10. Let the casserole rest for 10 minutes before serving. Garnish with chopped fresh chives.

Notes

Use thawed or partially thawed hash browns for best crispiness and to avoid sogginess. Do not overmix the custard mixture to keep texture light. Cooking sausage beforehand reduces excess grease. Let the casserole rest before slicing for cleaner cuts. Tent with foil if edges brown too quickly. Vegetarian and dairy-free adaptations are possible.
