  • ½ teaspoon baking soda

  • ¼ teaspoon salt
  • 6 tablespoons (85g) unsalted butter, softened
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • ¾ cup (135g) sugar-free chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
  2. In a large bowl, whisk together the almond flour, erythritol, baking soda, xanthan gum, and salt until fully combined.
  3. In a separate bowl, beat the softened butter with an electric mixer or whisk vigorously until smooth and creamy, about 1-2 minutes.
  4. Beat the egg and vanilla extract into the butter until just combined.
  5. Slowly add the dry ingredients to the wet mixture. Stir gently with a spatula until you have a thick, sticky dough. Avoid overmixing.
  6. Gently fold in the sugar-free chocolate chips until evenly distributed.
  7. Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheet about 2 inches apart, making around 15 cookies.
  8. Bake for 10-12 minutes until edges are golden but centers still look soft. Do not overbake.
